Coconut Curry Meatballs
Organic meat can be really expensive and generally speaking, I think vegetables are the key to a healthy life ;). Thus, as of late, I've been trying to decrease my meat consumption and replace it with organic, colorful veggies! I love these meatballs because, when the meat is mixed with the food processor veggies, you use half the meat and don't miss any of the bulk!

Ingredients
Meatballs
  • 1/2 lb grass fed ground beef
  • 1 lime, juiced
  • 4 medium sized chopped carrots
  • 1/2 red onion, chopped
  • 4 basil leaves
  • 3 tbsp cilantro
  • 1 clove garlic
  • 1/2 tsp ground ginger
  • 1/2 tsp cumin
  • 1/2 tsp chilli flakes
  • 1 tbsp tamari or coconut aminos
  • 1/2 tsp fish sauce
Sauce
  • 1 1/2 cups full fat coconut milk
  • 1 tbsp honey
  • 1 tsp tumeric if you're not used to using tumeric, start with a little bit. It can overwhelm the flavor
  • 1 1/2 tbsp almond butter
Chard
  • 5 leaves swiss chard add more if it fits in your skillet, it will cook down SIGNIFICANTLY
  • 1 1/2 tbsp avocado oil
  • pepper to taste
Toppings
  • avocado
  • cilantro
  • roasted sesame seeds
  • pepper to taste optional

Instructions
Meatballs
  1. Preheat oven to 400 degrees
  2. Add everything except the meat to the food processor. Process until well chopped
  3. Mix food processor veggies with meat and roll into 1-1.5 inch balls. Place spaced out on lined cookie sheet
  4. Cook in the oven for 15 minutes, roll over and cook for another 10 minutes
Sauce
  1. In a large skillet, heat coconut milk
  2. add in all the other ingredients and simmer for another 10 minutes, stirring constantly
Chard
  1. wash and chop the chard
  2. in a large skillet on medium heat, add the avocado oil and the chopped chard. While stirring, let cook for 3-4 minutes or until desired softness. Add pepper at the end.
Putting it all together
  1. Start by putting the chard on the bottom of your bowl, then add the meat balls and drizzle the sauce over the meatballs and chard. Lastly, add the toppings on top.
