Cinnamon Role Muffins

 

GUYS THESE ARE REALLY GOOD. I didn’t hold back on the sugar so, these are definitely a TREAT.. but they are gluten free and dairy free, so that’s a WIN. I looooove the ooey gooey cinnamon filling/topping that these have, if you eat them while they’re still warm, they’re deadly. Make sure when you fold in the filling with the batter that you don’t actually “mix ” it. They are better when the chunks of filling are kept together in the muffin (instead of the filling being even dispersed throughout the batter).

 

I contemplated not including the frosting because it meant more sugar, but I really wanted the cinnamon role affect and I’m really glad I did! They wouldn’t be half as good without the frosting.

Ingredients
Muffin Batter
  • 1 cup tapioca flour
  • 1 cup almond meal
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3 tbsp melted butter
  • 1 cup full fat coconut milk
  • 1 egg
Filling and Topping
  • 1/2 cup dark brown sugar
  • 1 tbsp cinnamon
  • 3/4 cup pecans, chopped
  • 3 tbsp melted butter
Frosting
  • 1 tbsp melted butter
  • 2 tbsp full fat coconut milk
  • 1 cup powdered sugar

Muffin Batter
  • 1 cup tapioca flour

  • 1/2 cup dark brown sugar
  • 1 tbsp cinnamon

  • 1 tbsp melted butter
  • 2 tbsp full fat coconut milk
  • 1 cup powdered sugar
Instructions
  1. Preheat oven to 400 degrees.
  2. Line a muffin pan with liners and set aside.
  3. Combine your filling/topping ingredients in a bowl and set aside.
  4. In another bowl add flour, baking powder, and salt. Mix with a fork until combined.
  5. Add milk and egg to melted butter and stir until combined.
  6. Pour the wet mixture into the dry mixture and stir until combined being sure not to over mix.
  7. Fold into the batter about 2/3 of the filling/topping. Fold, don't mix.
  8. Add batter to muffin liners and add the rest of the topping to each muffin.
  9. Place in oven and bake for 13-15 minutes or until inserted toothpick comes out clean.
  10. While muffins are baking, make your glaze. Combine all ingredients in a bowl. Add more sugar or milk to get the consistency you desire.
  11. Drizzle frosting over warm muffins.
