Gluten Free Zucchini Tortillas
Heaven knows nothing is going to beat an old fashioned Mexican style, white flour tortilla.... Ok now we got that out of the way, if you're looking for a good gluten free, paleo taco tortilla, than these are your new best friend. These are a great gluten free go to for your taco night! I purposefully left out burritos in the previous sentence because these tortillas really are too thick to roll up into a burrito. But everyone knows whatever you put in a burrito you can put in a taco so, PROBLEM SOLVED! Enjoy 🙂 (Gluten Free, Grain Free)

Ingredients
  • 3/4 cup tapioca flour
  • 1/2 cup coconut flour
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 2 cup grated zucchini (probably 2 medium size zucchinis)
  • 2 eggs

Ingredients
  • 3/4 cup tapioca flour
  • 1/2 cup coconut flour
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 2 cup grated zucchini (probably 2 medium size zucchinis)
  • 2 eggs
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Grate zuchinni with a cheese grater into a bowl. Squeeze water out of the grated zucchini with your hands.
  3. Add all dry ingredients and eggs to the bowl containing the zucchini and mix until well combined.
  4. Scoop 2 inch balls onto a baking sheet with parchment paper.
  5. Press the balls with your fingers into tortilla shapes.
  6. Bake for 35-40 minutes.
