Grain Free Pumpkin Bread

Hello loves! Try my newly created grain free pumpkin bread. I added pecans because I love my bread hearty with a little crunch, but you can easily leave those out if you like a smoother, softer bread. I also added chocolate chips because I think everything is better with a little dark chocolate, but again, leave those out if you disagree :). Tell me what you think!

Ingredients
  • 1 cup almond flour or meal
  • 1/4 cup coconut flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin spice
  • 3/4 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup melted ghee (or coconut oil)
  • 3 large eggs
  • 1/2 cup chopped pecans
  • 1/4 cup bittersweet chocolate chips

Instructions
  1. Preheat oven to 325
  2. Combine all dry ingredients in a bowl and mix
  3. Combine all wet ingredients in a bowl and mix
  4. Add wet ingredients to dry ingredients and mix until well combined
  5. Grease a loaf pan, or line with parchment paper and pour the batter into the pan
  6. Cook for 45-60 minutes or until toothpick comes out clean. I would definitely check it at 45 minutes if you like it more moist.
