Lobster Mac 'n Cheese
Depending on what kind of pasta you choose to use, this is a grain or legume based meal. Yep.. that means, not paleo. But I'm not someone who is super strict on my diet 100% of the time and when I'm craving some comfort food, I allow myself to splurge with absolutely NO GUILT! Also, my boyfriend is a lobster fisherman and therefore, the lobster was easy to come by... I'm not really sure I'd gone out of the way to get it otherwise, but if you're willing to, more power to you! Enjoy.

Ingredients
  • 1 box your favorite gluten free pasta
  • 2 lobster tails
  • 1 cup shredded sharp cheddar cheese (I used kerrygold)
  • 1/2 cup full fat coconut milk
  • 1 tsp salt
  • 1/2 tsp pepper

  • 1 box your favorite gluten free pasta
  • 2 lobster tails
  • 1 cup shredded sharp cheddar cheese (I used kerrygold)
  • 1/2 cup full fat coconut milk
  • 1 tsp salt
  • 1/2 tsp pepper
Instructions
  1. Bring a pot of water to a boil and add a pinch of salt. Add the lobster tails and simmer until done. When the shell changes color and the meat turns from glossy to opaque, the tails are ready. It could take 4-10 minutes depending on their size.
  2. While waiting for the lobster to cool, use a new pot and add a few cups to a boil for the pasta. Follow instructions on the box for the pasta.
  3. Strain pasta and put it back in the pot you boiled it in. Add in the coconut milk and stir until the pasta has absorbed it. Add in the shredded cheese, salt and pepper and stir.
  4. Use a sharp scissors to cut down the shell of the lobster, so you can pull the meat out. Then chop meat into bite size pieces.
  5. Add in the lobster, stir and serve!
