Paleo Apple Breakfast Muffins
These are perfect for breakfast on the go! They are gluten, grain and dairy free. When I made them the first time I added pumpkin seeds for some extra protein but didn't really think the texture meshed with the rest of the muffins, so I left it out of the recipe. You could also try adding collagen, but I haven't tested it.

Ingredients
  • 1 1/2 cups cassave flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ginger powder
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1/4 cup coconut sugar
  • 1/2 cup almond milk
  • 1/2 lemon (juiced)
  • 3 large eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 apple, shredded
  • 1 1/2 apple, chopped

  • 1/2 tsp baking soda

  • 1/4 cup coconut sugar
  • 1/2 cup almond milk
  • 1/2 lemon (juiced)
  • 3 large eggs
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 apple, shredded
  • 1 1/2 apple, chopped
Instructions
  1. Preheat oven to 350.
  2. Grease with coconut oil or line a muffin tin.
  3. Mix all the dry ingredients together in a bowl.
  4. In a separate bowl, mix all the wet ingredients (excluding the shredded/chopped apples).
  5. Add the wet ingredients to the dry ingredients and stir well.
  6. Fold in the shredded apple and chopped apple.
  7. Fill muffin cups about 3/4 full.
  8. Bake for about 20 minutes or until cooked through.
