Paleo Bacon Cheeseburger Meatloaf

"BEST MEATLOAF I'VE EVER HAD" - Zach G. (my boyfriend)... that pretty much sums it up. It's the best. Ever. The end. Disclaimer: This was largely inspired by PaleOMG bacon cheeseburger meatloaf but I put my own twist to it!

Meatloaf
  • 1 lb ground beef
  • 1 lb ground turkey
  • 3 cloves garlic chopped
  • 1 red bell pepper chopped
  • 1 cup mushrooms chopped
  • 1/3 red onion chopped
  • 1/4 cup pickled jalepenos chopped
  • 1/2 tsp garlic powder
  • 1 tsp sea salt
  • 2 tbsp bbq sauce
  • 2 tbsp mustard
  • 1 egg
  • 1 cup almond flour
Toppings
  • 1/2 lb bacon
  • 1 white onion chopped
  • 1 fresh jalepeno chopped
  • 1/3 cup vegan cheese find my recipe under "sauces and spreads"

Meatloaf
  • 1 lb ground beef

  • 1 cup mushrooms chopped
  • 1/3 red onion chopped
  • 1/4 cup pickled jalepenos chopped
  • 1/2 tsp garlic powder
  • 1 tsp sea salt
  • 2 tbsp bbq sauce
  • 2 tbsp mustard
  • 1 egg
  • 1 cup almond flour
Toppings
  • 1/2 lb bacon
  • 1 white onion chopped
  • 1 fresh jalepeno chopped
  • 1/3 cup vegan cheese find my recipe under "sauces and spreads"
Instructions
  1. Preheat oven to 350 degrees F. Line a baking baking sheet with aluminum foil and place a wire rack on top. Place all bacon on the wire rack and into oven to bake for 15 minutes or until crispy. Place bacon on paper towels and then add 3 tablespoons of the rendered bacon fat into a large sauté pan - this will be used to caramelize the onions later on. Dice bacon into small pieces once it's cooled.
  2. Combine garlic, bell pepper, mushrooms, red onion, pickled jalapenos, garlic powder, salt, mustard, bbq sauce, and egg in a large bowl and stir until combined
  3. Add in the meats and you can also add some of the chopped bacon if you have enough.
  4. Press meatloaf mixture into a parchment paper lined 9x5 loaf pan. Bake for 1 hour and 15 minutes or until the center is 165 degrees F.
  5. When the meatloaf goes in the oven, start on the onions. Add the white chopped onion to a large sauté pan with the rendered bacon fat. Cook on medium low heat for 30+ minutes until golden brown and caramelized. Keep on low heat until the meatloaf is done.
  6. Once the meatloaf is done, you can leave it in the pan or remove it once it's cooled a bit. Smother the cheese on top, followed by the caramelized onions, chopped bacon and chopped jalapeno!
