Paleo Breakfast Skillet (For Dinner)

This skillet recipe is different from my breakfast skillet because it has a ton more veggies in it, as well as bacon and ground turkey which makes it a little heavier and more time consuming. Usually dinner is my biggest meal of the day, so I try to have as many veggies as I can! I can also handle a heavy meal more easily in the evening than in the morning. Regardless, you could totally make this for breakfast!

Ingredients
  • 2 tbsp avocado oil
  • 2 tbsp butter
  • 2 small zucchini, chopped
  • 1/2 white onion, chopped
  • 4-5 leaves kale, chopped
  • 1 fresh jalepeno, chopped
  • 2 medium sweet potatoes
  • 1 small white potato (or just use another small sweet potato)
  • 1/4 lb ground turkey
  • 5 strips bacon, chopped
  • 4 eggs
Spices
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • pepper to taste
Toppings
  • 1/4 cup chopped green onion

  • 2 tbsp avocado oil

Instructions
  1. Wash and chop all the veggies and the bacon (while raw).
  2. Preheat a cast iron skillet on medium heat. Add avocado oil and butter.
  3. Add potatoes and bacon and allow to cook for 10 minutes. Stir constantly.
  4. Add in the ground turkey and let that cook with the potatoes and bacon for a couple minutes.
  5. Next, add the chopped white onion, zucchini, and jalepeno. Stir in the garlic powder, smoked paprika salt and pepper. Stir constantly until potatoes are soft and veggies are mostly cooked through.
  6. Finally, Add the eggs to the top of the hash ( usually don't mix mine in, just leave them sitting on top) and cover for 5 minutes or until your yolks are the desired runny-ness.
  7. Add green onion and salt and pepper on top at the end.
