Pumpkin Fat (Amaze)Balls

Ingredients
  • 1 cup unsweeted, shredded coconut
  • 1/2 cup raw pecans
  • 1/4 cup raw almonds
  • 1/4 cup raw pumpkin seeds
  • 1 tbsp flax seeds
  • 1 tbsp full fat coconut milk or coconut cream
  • 1/3 cup coconut butter (manna)
  • 1/3 cup pumpkin puree
  • 1.5 tbsp maple syrup
  • 1/2 of a 75-80% dark chocolate bar
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

  • 1 cup unsweeted, shredded coconut
  • 1/2 cup raw pecans
  • 1/4 cup raw almonds
  • 1/4 cup raw pumpkin seeds

Instructions
  1. Combine all dry ingredients into a food processor and process for 1 minute
  2. Add coconut milk, coconut butter, pumpkin and maple syrup and process for another minute. You may have to stop and stir every 15 seconds or so.
  3. Microwave 1/2 of the chocolate bar in a bowl for 35 seconds or until liquid.
  4. Roll dough into balls and then roll in melted chocolate (or use the chocolate to drizzle on top.
  5. Place the balls in the freezer on a small tray with parchment paper for a few hours. After they are hard, you can store in the refrigerator.
