Sweet Potato Hash

This may sound more like a breakfast entree but I have it for dinner a lot and it makes great leftovers! Never limit your bacon intake to just breakfast! As you can see from the photo, usually I pair it with a salad and another veggie ( in this case, asparagus).

Ingredients
  • 3 medium sweet potatoes
  • 1 medium white potato if you're on an AIP diet, just stick to sweet potatoes.
  • 1 fresh jalapeno
  • 1 medium white onion
  • 2 cloves minced garlic
  • 8 oz bacon
  • 2 tbsp grass fed butter
spices
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • pepper to taste
  • salt to taste

Instructions
  1. Chop the potatoes into 1/2 inch cubes. Chop the onion, fresh jalapeno, garlic and bacon (while raw).
  2. In a large cast iron skillet, heat up the butter over medium heat. When butter is heated, add the sweet potatoes and let cook for 10 minutes, stirring constantly.
  3. Add in the chopped bacon, jalapeno, onion, garlic and spices to the mix and cook for another 10 minutes or until the bacon is fully cooked to your liking and the potatoes are soft. Keep stirring constantly until done.
