Vegan Queso

OMGGGGG! I've never tasted something that tasted so much like the "real" thing! If it wasn't in the title, you'd never know this was free of any animal products! PERFECT for a vegan pizza, chips, meatloaf, french fries.. anything you can smother it on!

  • 1/2 cup soaked, raw cashews
  • 1/2 cup dry, roasted cashews
  • 1/3 cup chopped bell pepper
  • 2 tbsp lemon juice
  • 2 tbsp full fat coconut milk
  • 1 tbsp liquid from picked jalepenos jar
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1 1/2 tbsp chopped pickled jalepenos
  • 2 tbsp nutritional yeast

Instructions
  1. Soak the raw cashews for 2-3 hours. If you don't have that much time, just soak them as long as you can.
  2. Chop the bell pepper.
  3. Put everything into a blender and blend!
