Vegetarian Tacos
Love these tacos! Perfect for meatless Monday and so satisfying. I've linked the recipe for my zucchini tortillas at the bottom of the page!

Ingredients
Taco Toppings
  • cilantro
  • fresh jalepeno, chopped
  • white onion, chopped
  • avocado, chopped
Taco insides (baked)
  • 1 can black beans
  • 2 medium sweet potatoes
  • 2 tbsp avocado oil
  • 1 tsp salt
  • 1 tsp garlic powder
Taco insides (raw)
  • 3 lrg. leaves curly kale
  • 1.5 tbsp evoo
  • 1/2 tsp salt
  • 2 tsp lemon juice
Vegan Sour Cream
  • 1 1/4 cup full fat coconut milk
  • 1 tbsp apple cider vinegar
  • 1/2 lemon (juiced)
  • 1/4 tsp salt

Vegan Sour Cream
  • 1 1/4 cup full fat coconut milk
  • 1 tbsp apple cider vinegar
  • 1/2 lemon (juiced)
  • 1/4 tsp salt
Instructions
Baked insides
  1. preheat oven to 450. Chop sweet potatoes into small cubes and drain the beans. Mix in a bowl with garlic powder, salt and avocado oil.
  2. Place the sweet potatoes and beans on a lined baking sheet and bake for 10 minutes. Remove from the oven and flip the sweet potatoes over. Cook for another 10 minutes or until crispy.
Raw insides
  1. Wash kale and remove leaves from stems
  2. Chop kale leaves and mix in bowl with oil, salt and lemon juice
  3. Massage all ingredients until the kale becomes soft.
Toppings
  1. Top the tacos with white onion, cilantro and jalapeƱos (de-seed to reduce spicy-ness).
Sour Cream
  1. Combine all ingredients in blender and blend. If you want it thicker, you can add 1/4 or 1/2 of an avocado!
Put It All Together
  1. Choose your favorite tortillas (below is my zucchini tortilla recipe) and fill your tacos with the sweet potatoes and beans on the bottom, then the kale, next the toppings, and finally the sour cream!
